So a few months ago, me and my bestie were gabbing over dinner. I love that we can talk about everything from leggings, kids, counseling (pretty sure I need it) and some how ended up discussing intermittent fasting. What is acceptable in terms of not breaking your fast by increasing your insulin release, blah blah blah. And I mentioned something about my collagen peptides and she said she doesn’t add them to her coffee for that reason. What?! We need to fix that!

So that’s how I came up with the Collagen Oat Anytime Bites, so that you are still able to enjoy the benefits of intermittent fasting AND get your collagen intake for the day. Cause you can eat them ANYTIME!!

I LOVE my Vital Proteins Original Collagen Peptides. Collagen is so important for your skin, hair & nails, joints, etc. The number one cause of wrinkles and fine lines is collagen loss! WHY GOD WHY?! (insert Joey’s crying face) So get it in, when and where ever you can.

Besides in my coffee this is my next favorite way…

COLLAGEN OAT ANYTIME BITES

For this recipe I used peanut butter but you could use almond butter. Start by mixing all your wet ingredients – peanut butter, egg, avocado oil, maple syrup and vanilla together. I used a whisk, makes it much easier to get everything all incorporated. Then add in your dry ingredients – flour, oats, salt, baking powder and collagen peptides and mix well.

I prefer to use a stone cookie sheet but use what you have. Then make little inch size balls. Yields about 13 bites. Pop in 350 degree oven for about 12-15 minutes. Let cool then snack away! Literally one of the easiest and effective recipes.

I didn’t forget about you gluten-free peeps! You can sub out the all purpose flour for gluten-free oat flour. And the regular oats for gluten-free oats.

Love these little bites because if you are practicing IF in the mornings you do NOT have to skip the collagen to stay on track or if you don’t prefer your collagen in your coffee this is the perfect way to still get it in. These bites have just the right amount of sweet. My favorite way to enjoy them is with sliced banana and coffee.

Collagen Oat Anytime Bites

Ingredients
  

  • 1/2 C Peanut Butter/Almond Butter
  • 1 Egg
  • 1 T Avocado Oil/Coconut Oil
  • 1 T Vanilla Extract
  • 1/4 C Maple Syrup
  • 3/4 C Flour
  • 1/4 C Oats
  • 2 Scoops Original Collagen Peptides
  • 1/4 t Salt
  • 1 t Baking Powder
  • 1/4 C Shredded Coconut

Instructions
 

  • Preheat oven to 350°F.
  • In a bowl, whisk the wet ingredients until smooth.
  • Add the dry ingredients to the bowl and mix with a spatula until well combined.
  • Lightly grease cookie sheet cooking spray.
  • Roll into inch size balls.
  • Bake for 12-15 minutes and let cool prior to enjoying.
