Zucchini Lasagna: All the flavor! No Carbs!

Raise your hand if you love comfort food? I’ve got both hands raised! However I don’t always love the heaviness and the added calories that come with it. So I decided to do some testing…zucchini testing! For a minute I was obsessed with this small green veggie. Not sure why but let’s just say we ate A LOT of zucchini for a few months. And that’s how I came up with my Zucchini Lasagna: All the flavor! No Carbs!

I had seen a post on Zucchini Lasagna on Pinterest and thought hummm that might be tasty. So here’s what I came up with! Super easy and SUPER yummy! In fact you don’t even miss the noodles.

First I slice the zucchini very thin. Then I place them on a paper towel to get any excess moisture out. I lightly sprinkle with salt as well. I found the dryer the slices the better the lasagna.

Then I chopped up about half of a white onion in a little olive oil. Saute that for a few minutes. Pop in your ground beef. You could also use ground turkey. Add salt, pepper and minced garlic. I also like to add some fresh herbs. I have rosemary in my garden. It adds a nice freshness and flavor. Ok so next!! The sauce. You want it very thick. You can use just regular spaghetti sauce or tomato paste if you want it really thick. Again, you want to keep as much moisture out of this dish as possible. Because once this starts cooking the zucchini will “sweat” a bit.

Then I just start layering it up! First the zucchini slices, the meat sauce and of course the cheese. I like to use a mixture of mozzarella, sharp cheddar and parmesan. But you can use whatever your favorites are.

Once it’s all layered and ready to go. Pop in the oven, 375° for about 25 minutes. Give or take. I like my cheese to be very browned and crispy on the edges.
