So this post makes me oh so happy! Y’all I love me a crockpot and chili! Two of my favorite things about winter. Was scrolling one day through Facebook and a similar recipe popped up. I thought “yum” and took a screenshot.

Remember our brief snow storm a few weeks ago?! Well this was the perfect time to try this Creamy Crockpot White Chicken Chili! I have tweaked the recipe from the original post I saw to the one I made that one snowy night. And YUM YUM YUM!! This chili is so creamy and such a nice spin on traditional chili.

So there’s not a whole lot to this chili. I mean the crockpot does all the work! Hence one of the reasons I love them so much. You just dump it all in and let the magic begin!

Let’s talk chicken for a second. Y’all know I love the chicken tenders from Crowd Cow but for this particular chili I am using this Tyson Grilled and Ready Fully Cooked Chicken Breast. If you have not tried this, you need to. It saves me SOOOOO much time. And I don’t add one drop of seasoning to it. It has so much flavor. Keep in mind, when you are adding the spices to your chili you may need to adjust if you are using regular chicken breast or tenders.

Time to add it all together! I start with the beans, rinse and add to your crockpot. Then add your cream cheese, corn, green chilis, and chicken. The only seasoning I add at this point is kosher salt and pepper and a few dashes of Tabasco sauce. I like to let it marinate and cook for a bit. Add just enough chicken broth to cover everything.

Check on about 3 hours later. That gives everything enough time to melt and for the flavors to come out. This is when I add in my spices – garlic powder, season salt and chili powder. Cover and let cook for a few hours. At this time I’ll reduce cooking temp to low.

Then about 30 minutes or so before serving. Add in your cheese. This makes it SO SO creamy!! And adds just another layer of flavor. Once all melted and creamy top with your favorite toppings. For the adults I added more cheese, a dollop of cream cheese and chopped jalapeno! Adds in a little extra spicy! Serve with crunchy bread. Your taste buds will thank you!

Creamy Crockpot White Chicken Chili

Ingredients
  

  • 2 Cans Cannellini Beans
  • 3 Cups Chicken
  • 1 Can Corn (Undrained)
  • 1 Package Cream Cheese (8 oz)
  • 1 Can Green Chilies (7 oz)
  • 2-3 Cups Chicken Broth
  • 2-4 Dashes Tabasco Sauce
  • 1/2 Teaspoon Season Salt
  • 1/2 Teaspoon Chili Powder
  • 1/2 Teaspoon Garlic Poweder
  • 1 1/2 Cups Cheese

Instructions
 

  • Set Crockpot on high temp.
  • Add in your beans, cream cheese, corn, and green chiles.
  • Add a few dashes of Tabasco sauce and kosher salt and pepper.
  • Cover and let cook for about 3 hours.
  • Add in your spices – garlic powder, chili powder and season salt.
  • Reduce temp to low and allow to cook for a few more hours.
  • About 30 minutes before serving, add in your cheese. Remain cooking until melted and creamy.
  • Top with cheese, sour cream and jalapenos or you favorite toppings. Enjoy!
