Easy Grilled Chicken and Sausage Kabobs

While school has started and a new season is upon us, here in North Texas our temps still scream summer! We are not quite ready to give up summer grillin’ just yet. In my last Crowd Cow order I got chicken tenders and these yummy sausage links. I personally prefer chicken tenders to chicken breasts. They are so much easier to prepare and cook time is way less. And they are perfect for kabobs, you don’t even have to cut them.

For these particular Easy Grilled Chicken and Sausage Kabobs I used purple onion, yellow and red bell peppers. I find the yellow and red peppers are much sweeter. And I like how pretty all the colors are. I rough chop them about an inch in size. I season the veggies before I put them on the skewers. Just olive oil, salt and pepper.

For the sausage I used Mild Pork Italian Sausage Links. The flavor goes perfectly with the onion and peppers. I didn’t add any additional seasoning to these, simply just cut into one inch pieces. Then I just alternate the sausage, onion and peppers to create these colorful tasty kabobs!

For the chicken I used Organic & Free Range Chicken Tenders. I cut about 3/4 into cubes and then kept a few whole piece strips. I like to make a few kabobs of only meat. Let’s just say, I have some hearty eaters in my family!! For seasoning I used olive oil, salt, pepper, garlic powder, a dash of lemon juice and about half a ranch dressing seasoning packet. Then again just alternate the onions and peppers!

Once these are all nice and grilled to perfection I like to add just an extra layer of flavor. Melted butter seasoned with salt, pepper and season salt. Brush right on the hot kabobs! Trust me it takes it to another level. However, omit if you care about added calories! 😉

CUTTING BOARD HACK:
Love cutting boards but have a hard time shelling out the cash for them? They are can pretty expensive. Especially the large ones. The Home Depot sells large unfinished pieces of butcher block. Typically used for countertops. Well they also work GREAT for cutting boards. I bought a large piece for about $100, and cut it into 3 pieces. Sand lightly and add a food safe wood sealer and BAM!! Perfect for entertaining, parties, charcuterie trays…and kabobs! 🙂

And what chicken, sausage, onion and pepper kabobs would be complete without mash potatoes! Or any potato at that matter. Rarely ever do I make my mash potatoes the same. For this batch I used the rest of the ranch dressing seasoning packet. So all the flavors tie in and compliment each other. And there you have it a light, yet savory summer dinner.
