I don’t think there are many people on this planet that don’t have a sweet tooth for chocolate. I mean what’s not to love! It can be melted, covered in nuts, pie, cake, the possibilities are endless! So let me tell you about two of my favorite ways to indulge in chocolate…just in time for Valentine’s Day!

Chocolate Cream Pie with Oreo Crust

I first made this for Christmas dinner. My husband requested chocolate pie. I know he was dreaming of his mother’s famous chocolate pie – however this gal has yet to master her beyond delicious recipe. So I scoured the world wide web aka Pinterest for some inspiration. I found a few recipes that sounded yum and then created my own. Saw a few with an Oreo cookie crust and I knew that’s the route I wanted to go. The way it looks is so pretty and better yet how it tastes by adding an extra layer of chocolate flavor. Now lets talk about the filling. This is a cream cheese base with cocoa powder, whipped cream and powdered sugar. HOLY MOLY is it decadent! I believe that’s the word my mother used to describe it. Hands down one of my favorite desserts I have ever made.

Chocolate Flourless Cake

Oh me oh my! Is it a pie? A cake? Or even a brownie? I feel like this dessert encompasses it all. Regardless the name it does not disappoint!

I feel like the word “flourless” sounds intimating. Well for me anyway. The first time I made this cake I was a bit nervous. Like how in the world can this come out good with no flour?! Well friends I am here to tell you it is so simple and easy and SO yummy! I have made it countless times and comes out perfect every time. Goes great with ice cream or a dollop of whipped cream. A cup of coffee or champagne!

Add your delicious chocolate mixture to your pan and bake.
Dust with powdered sugar and enjoy! So rich and decadent!

Chocolate Cream Pie

Chocolate Cream Pie With Oreo Crust

Rich and creamy chocolate pie on a bed of Oreo crust topping with whipped cream and chocolate shavings.

Ingredients
  

  • 3 cups heavy whipping cream
  • 1/3 cup powdered sugar

Chocolate Filling

  • 4 tablespoons butter
  • 4 ounces semi sweet chocolate chips
  • 1 1/2 cups powered sugar
  • 1/2 cup cocoa powder
  • 1 8 oz package of cream cheese (softened)
  • 3 cups prepared whipped cream (the rest will go on top)

Oreo Cookie Crust

  • 4 ounces butter (1/2 a stick) melted
  • 2 sleeves Oreo Cookie (ground in food processor)

Instructions
 

  • Melt your butter in microwave for about 30 seconds. After you grind your oreos in the food processor mix the two until all coated. Press into your pie dish. Bake on 350° for 8-10 minutes.
    For the whipped topping: In a medium bowl using a electric mixer, whip 3 cups heavy whipping cream and powdered sugar on high until stiff peaks form about 5 minutes. Chill until ready to use. (This should make 5-6 cups whipped cream).
    In a large bowl using an electric mixer beat the softened cream cheese, cocoa powder and powdered sugar until smooth. Set aside. In a small bowl add the chocolate chips and butter, microwave for 30-45 seconds. Using the electric mixer mix in the melted chocolate, and 3 cups of the whipped cream into the cream cheese mixture until combined.
    Spread chocolate filling into oreo pie crust. Refrigerate for 4 hours. Spread the remaining whipped cream on top. Garnish with chocolate shavings

Chocolate Flourless Cake

The perfect combination of a pie, cake and brownie!

Ingredients
  

  • 1 cup cocoa powder
  • 8 ounces semi sweet chocolate chips
  • 1 cup butter (2 sticks)
  • 1 1/4 cup sugar
  • 1/4 teaspoon cinnamon (optional)
  • 6 eggs

Instructions
 

  • Preheat the oven to 350°. Lightly butter the bottom and sides of a 10-inch springform pan. Dust the bottom and sides with the cocoa, shaking to remove excess.
    Combine the chocolate and butter in a large bowl and microwave in 30-second intervals, stirring in between each, until completely melted and smooth, about 1 minute. Let cool slightly. Whisk in the granulated sugar. Whisk in the eggs 1 at a time, whisking well after each addition. Sift the remaining 1 cup cocoa over the mixture and whisk until just combined.
    Pour the batter into the prepared pan and bake until just barely set, around 30 minutes. Transfer to a wire rack; let cool for 10 minutes. Run a knife around the edges to loosen and remove sides. Remove to a serving platter and let cool completely. Dust with powdered sugar. Serve with ice cream, whipped cream or berries.
