There is nothing more refreshing on a hot summer day than cold juicy watermelon. It is so fresh, sweet and hydrating…bonus! My kiddos and family absolutely love it. Watermelon also reminds me of my childhood, my mom and grandma would cut giant round slices that would take up your whole plate. We would gobble it up with a spoon! I recently ordered a watermelon from Walmart Grocery Pickup. I’m pretty sure it was a least 10 lbs! So it got the ole wheels turning. I had to find a way to use the beast of a watermelon. And here’s what I came up with! SWEET PINEAPPLE WATERMELON POPSICLES So for several days I kept finding popsicle molds everywhere. My kids filled them with water and put in the fridge. May Must-Haves: From Head to Toe.

We are on the cusp of summer over here. My kiddos have a few days of school left and then it’s break time baby! Here in North Texas it gets pretty pippin’ hot so all these May Must-Haves are about to come in real handy. COVER THAT HEAD!When I was younger I was a sun worshiper. I loved to lay out and get tan. Summertime Sweet Treats: Strawberry Surprise and Easy Key Lime Pie

Can you all believe it’s mid May?! Summer is knocking already! I do not know if I am prepared for the heat. But my belly is prepared for these yummy treats. As much as I love a pecan pie it’s too hot for all that. These two summertime sweet treats are light and fresh and hit the spot. Perfect for summer BBQ’s by the pool, family gatherings or the just the weekend. These are definitely make ahead of time and sit in the fridge treats. Both get better each day. STRAWBERRY SURPRISE I started making this dessert years ago. I would make it for my husbands co-workers. That’s where the name came from. It was a “hey is your wife going to make us that strawberry surprise dessert?” and we’ve called it that ever since. Let’s get started by cutting your pound cake in thin slices. My DIY Faux Real Ficus Tree

This project took a bit of time. Not because it was hard but because I had a hard time finding supplies. I originally wanted to do an olive tree. But I could not find branches to save my life. I had my heart set on these olive branches from Walmart but were sold out every time I went in and they are not available online. So I had to rethink my tree. In the meantime I had my hubs cut me down some large branches that I would use as the base of the tree. Originally I had planned on making two trees to flank my hutch in my sitting room. However, after getting the large branches into the room it seemed a bit much. So after scouring the internet for branches I stumbled upon a DIY ficus tree. It was by far the best one I had seen. Except her process was insane! There was NO way I was going to paint each leaf! I ended up going with some beautiful ficus branches from Michael’s. My Appendectomy Story

For most of us 2020 was a real doozy of a year. So many things happened or should I say didn’t happen. For the first time in my life I really struggled with my health. I have always had a bit of a wonky tummy so in the beginning of this journey I didn’t think too much about it. I remember it was the first weekend we had been out of the house since quarantine started in March. It was May and my kiddos last day of school. My amazing Mom had a graduation for them in her backyard. Along with their cousins and “teachers” AKA my sister and me! We got awards, flowers and crowns. All together we did it! Survived the first round of home school. The next day we went out to lunch, first time out and about. It was truly great! I also had my very first hair appointment. Keep in mind I am blonde. Cream Cheese and Herb Scallop Potatoes

OK so you probably have seen me post and talk about these potatoes on my IG account. I promised the recipe and here it is! These cream cheese and herb scallop potatoes are my favorite side dish when I making a meat as the main course. They go amazing with pork loin, ham and ribs. But honestly anything! Those are just my family favorites. I first made these for Christmas. They have now become a tradition to our meal. The cream cheese and the mix of the sage and rosemary make this dish so incredibly rich and delicious. So I like to start melting my butter in my pan. While it’s melting I chop up my onion and add it to the butter. I sprinkle with salt and pepper and let saute for a few minutes. Then I add my minced garlic. Stir it up and let cook just briefly. Now it’s time for the yummy part. Add in your cream cheese and milk. It will take a little bit to get it all melted.
