Zucchini Lasagna: All the flavor! No Carbs!

Raise your hand if you love comfort food? I’ve got both hands raised! However I don’t always love the heaviness and the added calories that come with it. So I decided to do some testing…zucchini testing! For a minute I was obsessed with this small green veggie. Not sure why but let’s just say we ate A LOT of zucchini for a few months. And that’s how I came up with my Zucchini Lasagna: All the flavor! No Carbs! I had seen a post on Zucchini Lasagna on Pinterest and thought hummm that might be tasty. So here’s what I came up with! Super easy and SUPER yummy! In fact you don’t even miss the noodles. First I slice the zucchini very thin. Then I place them on a paper towel to get any excess moisture out. I lightly sprinkle with salt as well. I found the dryer the slices the better the lasagna. Then I chopped up about half of a white onion in a little olive oil. Saute that for a few minutes. Howdy friends! Well warmer weather calls for new and lighter recipes. So here is one to get you started – Lazy Girl Lettuce Wraps! A light and savory blend of spicy and sweet sauce, ground turkey and a fresh lettuce crunch. I stumbled upon these lettuce wraps one evening. I had all the intention to make another recipe but then realized at like 5:00 I did not even have all the correct ingredients. Sad to admit I’ve been there all too many times. Anyway y’all can thank me for being unprepared cause these puppies are LEGIT DELISH!! I honestly want to make them everyday. My kiddos and hubs also raved about them and have requested on more than one occasion. Alright so let’s get to it… I call them Lazy Girl Lettuce Wraps cause you really only need about 4 ingredients. I start off with about a pound of lean ground turkey. Sizzle that up until almost brown. Then add in your mushrooms. You can use as much or little as you want. Depending on how many you are feeding. I have made this bread prolly 100 times! It never gets old. And chances are if you are close to me you have received at least a loaf or two! It’s a giftable bread! 😉 So that’s why I call it my Ultimate Banana Bread. Every time I shop I buy about 8-10 bananas. They go pretty quickly at my house. But it’s a general rule if you see 2 or 3 bananas left you leave them alone. You let them get ugly and brown cause that means Mom will make banana bread. My family LOVES banana bread. It maybe last 1 day! So I make it often. I started off using a yum recipe from Paula Deen. As you can see this page is well loved. I honestly think that is a dried piece of banana!! But over time I have created my own recipe. I start off using this exact recipe. However, I’ve added in a few extras. I only use two bananas. At first I was a bit intimidated to make popcorn on my stove. I’ve always just made the good ole microwave version. But I decided to give it a shot and man I am glad I did. So here’s to Snacks that Pop! My Sweet and Savory Popcorn that my kiddos love! Plus, you don’t have to worry about the danger of the chemicals in the microwave version. And it takes about the same amount of time! So back to mine not tasting like my Mom’s – I am happy to say I have found and mastered my own version and it’s pretty tasty too! I use coconut oil, vegetable oil (just a small pour), butter and popcorn kernels.  Simply add your coconut oil to your pot, let it melt a second, then add a very small pour/tablespoon of vegetable oil. So during my search I stumbled upon an Advent Guide that corresponds to The Jesus Storybook Bible. It gives step-by-step instructions. You simply download the PDF, print the pictures with the matching scripture and cut! Now you can still use the guide even if you don’t have the storybook. You can look at the beautifully done pictures and read the scriptures from your own Bible. I decided to kick it up a notch and add a “bonus” treat to a few of the days, every other to be exact. I prefer a traditional setting with beautiful plates, wine glasses and tons of candles. Now I know most do not and frankly find it overwhelming. Especially when you are the host in charge of guests, turkey, pies and NOW you need a fancy table?!! Fear not you don’t! I have created two very simple tablescapes that are sure to wow your guests and keep you underwhelmed and help you get your table Thanksgiving ready! I like to mix my flowers and plants – some fake, some real. You don’t have to go wild and spend a ton of money of fresh flowers. For this first look I used some goodies from my yard. I have a Magnolia tree that I frequently cut leaves from. Makes a perfect filler for your vases, tables and wreaths. And they last a long time even out of water. Powder Bath Reveal: Bye Bye Brown Cave

So I am so excited about this bathroom reveal. It has been one of the most dramatic changes we’ve made in our home. We have been in our home a little over four years. So this makeover has been long coming. When I say the bathroom was dark. I literally mean dark brown…like the whole thing! Not sure what they were going for. Darkness?! Scary?! I don’t think this is what people mean by Monochromatic. We painted the bathroom days after moving in. Not cause I already had this great vision but just so we could see!! We pretty much removed everything from the toilet, vanity, shower walls, floors, and fixtures. Had the pleasure of working with an amazing team from Ribo Home Remodeling. I’ve been told I am very “particular” (not sure I can argue…hehe!) so these guys had their hands full and did a stand up job! My vision for this bathroom came from this stunning cement tile from Cement Tile Shop. It’s a soft gray and off while tile. SO PRETTY!! Until a few years back my sister surprised me with a MacKenzie-Childs Butterfly Garden Enamel Pedestal Platter for my birthday. I LOVED it from the second I saw it! It has a permanent home on my countertop. I fill it with banana bread, cakes, pies, biscuits, or even fruit! To date one of my favorite gifts. So each birthday I am gifted a beautiful new addition…to my new found collection. Unfortunately, the Butterfly Garden Collection was discontinued. Tear. BUT that didn’t stop the tradition from continuing. I have since added the Courtly Check to the mix.
