Keeping It Simple Chicken Tortilla Soup

One of my family favorites is Chicken Tortilla Soup. It’s got a good balance between warm and hearty and fresh and light. Just the right soup to start fall with. There are all different ways to make this Chicken Tortilla Soup. But I have found I like this soup with just very simple ingredients. Then jazz it up with yummy fresh toppings. Tortilla chips, cheddar cheese, avocado, sour cream, sliced jalapenos, sour cream! Anything goes! So for the main ingredient – chicken! Not all is created equal. I feel like there are definitely some things you can buy generic, for me chicken is not one. Crowd Cow is my go-to for meat. Their chicken is pasture-raised and organic free range chicken. And what that translates to is top quality. I don’t have to worry about feeding my family hormones or some weird by product “chicken”. Harvest Fall Tablescape with Apples, Corn and White Pumpkins

I have been trying to get in the fall spirit but these temps have been killing me! Most days I literally refuse to go outside. However, we did see a break and I was able to pull a bit of inspo and it came from my Ginger Apple Vodka Martini. I am not quite ready for the traditional fall leaves and pumpkins but I’m ready for something! And I keep going back to apples. Pumpkin Spice Bread

Well it’s almost fall y’all! And in celebration of it being September I am sharing my favorite Pumpkin Spice Bread with hints of cinnamon and ginger. It will give you all the fall feels. My family goes crazy for it. This recipes make two loaves. So we enjoy one and I freeze the other one. Tastes just as good when thawed. I like to have a little piece in the morning with my coffee. My taste inspiration for this pumpkin spice bread recipe is the famous slice from Starbucks. You all know the one. This recipe comes pretty darn close! So here’s what you do! In a large bowl, combine the sugar, oil and eggs. Add pumpkin and mix well. Combine the flour, baking soda, salt, cinnamon, pumpkin spice, ginger, baking soda and vanilla. Slowly add your water – beating well after each addition. Remember this recipe makes two loaves. I like to use a traditional loaf pan and also a bundt cake pan. This requires separate cook times. But you do not have to use different pans. Then pour mixture evenly into greased pans. Bake loaf pan at 350° for 50-60 minutes or until toothpick comes out clean. If […]
