Over the years we all have all fallen into our “designated” contributions. And one of mine is pies! All Things Watermelon: From Sweet Popsicles to Fresh Salad to Cold Coolers
There is nothing more refreshing on a hot summer day than cold juicy watermelon. It is so fresh, sweet and hydrating…bonus! My kiddos and family absolutely love it. Watermelon also reminds me of my childhood, my mom and grandma would cut giant round slices that would take up your whole plate. We would gobble it up with a spoon! I recently ordered a watermelon from Walmart Grocery Pickup. I’m pretty sure it was a least 10 lbs! So it got the ole wheels turning. I had to find a way to use the beast of a watermelon. And here’s what I came up with! SWEET PINEAPPLE WATERMELON POPSICLES So for several days I kept finding popsicle molds everywhere. My kids filled them with water and put in the fridge. Summertime Sweet Treats: Strawberry Surprise and Easy Key Lime Pie
Can you all believe it’s mid May?! Summer is knocking already! I do not know if I am prepared for the heat. But my belly is prepared for these yummy treats. As much as I love a pecan pie it’s too hot for all that. These two summertime sweet treats are light and fresh and hit the spot. Perfect for summer BBQ’s by the pool, family gatherings or the just the weekend. These are definitely make ahead of time and sit in the fridge treats. Both get better each day. STRAWBERRY SURPRISE I started making this dessert years ago. I would make it for my husbands co-workers. That’s where the name came from. It was a “hey is your wife going to make us that strawberry surprise dessert?” and we’ve called it that ever since. Let’s get started by cutting your pound cake in thin slices. At first I was a bit intimidated to make popcorn on my stove. I’ve always just made the good ole microwave version. But I decided to give it a shot and man I am glad I did. So here’s to Snacks that Pop! My Sweet and Savory Popcorn that my kiddos love! Plus, you don’t have to worry about the danger of the chemicals in the microwave version. And it takes about the same amount of time! So back to mine not tasting like my Mom’s – I am happy to say I have found and mastered my own version and it’s pretty tasty too! I use coconut oil, vegetable oil (just a small pour), butter and popcorn kernels.
