Collagen Oat Anytime Bites

Collagen Oat Anytime Bites

This page may contain affiliate links, see full disclosure here. So a few months ago, me and my bestie were gabbing over dinner. I love that we can talk about everything from leggings, kids, counseling (pretty sure I need it) and some how ended up discussing intermittent fasting. What is acceptable in terms of not breaking your fast by increasing your insulin release, blah blah blah. And I mentioned something about my collagen peptides and she said she doesn’t add them to her coffee for that reason. What?! We need to fix that! So that’s how I came up with the Collagen Oat Anytime Bites, so that you are still able to enjoy the benefits of intermittent fasting AND get your collagen intake for the day. Cause you can eat them ANYTIME!! I LOVE my Vital Proteins Original Collagen Peptides. Collagen is so important for your skin, hair & nails, joints, etc. The number one cause of wrinkles and fine lines is collagen loss! WHY GOD WHY?! (insert Joey’s crying face) So get it in, when and where ever you can. Besides in my coffee this is my next favorite way… COLLAGEN OAT ANYTIME BITES For this recipe I used […]

Sweet Pecan Pie and No Bake Apple Pie Cheesecake

This page may contain affiliate links, see full disclosure here. I love Thanksgiving dinner. It is one of my favorite meals of the year. My family keeps it pretty traditional. Over the years we all have all fallen into our “designated” contributions. And one of mine is pies! I mean prolly the best part of the meal! 😉 So today I will be sharing two of my favorite Thanksgiving desserts: my sweet pecan pie and no bake apple pie cheesecake. The pecan pie is a staple. It’s taken me YEARS to perfect! My brother-in-law is my ultimate tester. He gives me good feedback every year. Then I like to mix it up for the rest of the pies. Sometimes I do pumpkin pie, I think I made chocolate cream pie last year. This year I decided to reintroduce my no bake apple pie cheesecake. I tried a ton of pecan pie recipes. For me it’s finding the right consistency on the “guts” or inside of the pie – not too runny but overcooked. But I have finally settled on a recipe that I have used over the last few years. The taste is spot on and the consistency is right […]

So I know I say A LOT of desserts I make are my favorite. But this chocolate croissant bread pudding is way up there! I mean who’s to say how many favorites one girl can have?! 🙂 I started making this tasty little treasure BK (before kids). I have put this in my tried and true recipe folder!! I know most traditional bread pudding consist of bread and raisins. This is my version made with chocolate chips and croissants. It’s so buttery and sweet but not too sweet. I love to serve it with ice cream. But just as heavenly on it’s own. Alright let’s get started. Go ahead and preheat your oven to 350 degrees. Using a mixer, add your butter and sugar and mix until well blended. Add the cinnamon, and vanilla. Mix until all combined. With the mixer going, crack your 5 eggs one at a time into the mixture. Summertime Sweet Treats: Strawberry Surprise and Easy Key Lime Pie

Can you all believe it’s mid May?! Summer is knocking already! I do not know if I am prepared for the heat. But my belly is prepared for these yummy treats. As much as I love a pecan pie it’s too hot for all that. These two summertime sweet treats are light and fresh and hit the spot. Perfect for summer BBQ’s by the pool, family gatherings or the just the weekend. These are definitely make ahead of time and sit in the fridge treats. Both get better each day. STRAWBERRY SURPRISE I started making this dessert years ago. I would make it for my husbands co-workers. That’s where the name came from. It was a “hey is your wife going to make us that strawberry surprise dessert?” and we’ve called it that ever since. Let’s get started by cutting your pound cake in thin slices. Your goal is to have enough for two layers. Then set aside. Grab your strawberries and give them a good wash. Remove the stems or their “hair” as my daughter says. I like to cut them in half and then thinly slice. Alright now moving on to your wet ingredients. Aka the really yummy […]

Decadent Chocolate – 2 Ways!

Chocolate Cream Pie

I don’t think there are many people on this planet that don’t have a sweet tooth for chocolate. I mean what’s not to love! It can be melted, covered in nuts, pie, cake, the possibilities are endless! So let me tell you about two of my favorite ways to indulge in chocolate…just in time for Valentine’s Day! Chocolate Cream Pie with Oreo Crust I first made this for Christmas dinner. My husband requested chocolate pie. I know he was dreaming of his mother’s famous chocolate pie – however this gal has yet to master her beyond delicious recipe. So I scoured the world wide web aka Pinterest for some inspiration. I found a few recipes that sounded yum and then created my own. Saw a few with an Oreo cookie crust and I knew that’s the route I wanted to go. The way it looks is so pretty and better yet how it tastes by adding an extra layer of chocolate flavor. Now lets talk about the filling. This is a cream cheese base with cocoa powder, whipped cream and powdered sugar. HOLY MOLY is it decadent! I believe that’s the word my mother used to describe it. Hands down […]

Pumpkin Spice Bread with hints of cinnamon and ginger!

Pumpkin Spice Bread

Well it’s almost fall y’all! And in celebration of it being September I am sharing my favorite Pumpkin Spice Bread with hints of cinnamon and ginger. It will give you all the fall feels. My family goes crazy for it. This recipes make two loaves. So we enjoy one and I freeze the other one. Tastes just as good when thawed. I like to have a little piece in the morning with my coffee. My taste inspiration for this pumpkin spice bread recipe is the famous slice from Starbucks. You all know the one. This recipe comes pretty darn close! So here’s what you do! In a large bowl, combine the sugar, oil and eggs. Add pumpkin and mix well. Combine the flour, baking soda, salt, cinnamon, pumpkin spice, ginger, baking soda and vanilla. Slowly add your water – beating well after each addition. Remember this recipe makes two loaves. I like to use a traditional loaf pan and also a bundt cake pan. This requires separate cook times. But you do not have to use different pans. Then pour mixture evenly into greased pans. Bake loaf pan at 350° for 50-60 minutes or until toothpick comes out clean. If […]

The Ultimate Banana Bread

Banana Bread Recipe

I have made this bread prolly 100 times! It never gets old. And chances are if you are close to me you have received at least a loaf or two! It’s a giftable bread! 😉 So that’s why I call it my Ultimate Banana Bread. Every time I shop I buy about 8-10 bananas. They go pretty quickly at my house. But it’s a general rule if you see 2 or 3 bananas left you leave them alone. You let them get ugly and brown cause that means Mom will make banana bread. My family LOVES banana bread. It maybe last 1 day! So I make it often. I started off using a yum recipe from Paula Deen. As you can see this page is well loved. I honestly think that is a dried piece of banana!! But over time I have created my own recipe. I start off using this exact recipe. However, I’ve added in a few extras. I only use two bananas. For me, using three just makes it a little too “banana-y”. I also add in cinnamon and my secret ingredient, maple extract. It adds such a yummy flavor and goes great with the cinnamon. I […]
