All Things Watermelon: From Sweet Popsicles to Fresh Salad to Cold Coolers

There is nothing more refreshing on a hot summer day than cold juicy watermelon. It is so fresh, sweet and hydrating…bonus! My kiddos and family absolutely love it. Watermelon also reminds me of my childhood, my mom and grandma would cut giant round slices that would take up your whole plate. We would gobble it up with a spoon! I recently ordered a watermelon from Walmart Grocery Pickup. I’m pretty sure it was a least 10 lbs! So it got the ole wheels turning. I had to find a way to use the beast of a watermelon. And here’s what I came up with! SWEET PINEAPPLE WATERMELON POPSICLES So for several days I kept finding popsicle molds everywhere. My kids filled them with water and put in the fridge. I found some just laying around. I don’t know if it was subliminal advertising but it worked!! These definitely took a couple rounds to get the right flavor and sweetness. Summertime Sweet Treats: Strawberry Surprise and Easy Key Lime Pie

Can you all believe it’s mid May?! Summer is knocking already! I do not know if I am prepared for the heat. But my belly is prepared for these yummy treats. As much as I love a pecan pie it’s too hot for all that. These two summertime sweet treats are light and fresh and hit the spot. Perfect for summer BBQ’s by the pool, family gatherings or the just the weekend. These are definitely make ahead of time and sit in the fridge treats. Both get better each day. STRAWBERRY SURPRISE I started making this dessert years ago. I would make it for my husbands co-workers. That’s where the name came from. It was a “hey is your wife going to make us that strawberry surprise dessert?” and we’ve called it that ever since. Let’s get started by cutting your pound cake in thin slices. Your goal is to have enough for two layers. Then set aside. Grab your strawberries and give them a good wash. Remove the stems or their “hair” as my daughter says. Cream Cheese and Herb Scallop Potatoes

OK so you probably have seen me post and talk about these potatoes on my IG account. I promised the recipe and here it is! These cream cheese and herb scallop potatoes are my favorite side dish when I making a meat as the main course. They go amazing with pork loin, ham and ribs. But honestly anything! Those are just my family favorites. I first made these for Christmas. They have now become a tradition to our meal. The cream cheese and the mix of the sage and rosemary make this dish so incredibly rich and delicious. So I like to start melting my butter in my pan. While it’s melting I chop up my onion and add it to the butter. I sprinkle with salt and pepper and let saute for a few minutes. Then I add my minced garlic. Stir it up and let cook just briefly. Now it’s time for the yummy part. Add in your cream cheese and milk. It will take a little bit to get it all melted. Meat N’ Tater Pie and Cheesy Hamburger and Tater Casserole

So this first recipe is inspired by the oh so amazing Joanna Gaines. I saw it on her new cooking show. Her Granddad’s famous dish. A yummy Lebanese Fatayar. Well my version is not Lebanese but maybe a little Texan! I shall you Meat N’ Tater Pie 😉 These savory little ground beef and hash brown biscuit pies were a huge hit with my family. With crazy simple ingredients I thought they might be dry but not at all. And don’t let the word “Fatayar” scare you! Literally means meat pie! I went the simple route and used canned grocery biscuits like Jo suggests. All you have to do is flour them and roll them out and you are good to go. But you can also make your own dough if you prefer. Now I folded mine a little different. I went with the empanada style. Folding in half then crimping the edges with a fork. I love that both these recipes have similar ingredients yet taste completely different. So helpful when creating your shopping list. So let me tell you about two of my favorite ways to indulge in chocolate…just in time for Valentine’s Day! Chocolate Cream Pie with Oreo Crust I first made this for Christmas dinner. My husband requested chocolate pie. I know he was dreaming of his mother’s famous chocolate pie – however this gal has yet to master her beyond delicious recipe. So I scoured the world wide web aka Pinterest for some inspiration. I found a few recipes that sounded yum and then created my own. These delicious concoctions were created in lieu of Texas/OU weekend last year but we have made them many times after. Well it’s almost fall y’all! And in celebration of it being September I am sharing my favorite Pumpkin Spice Bread with hints of cinnamon and ginger. It will give you all the fall feels. My family goes crazy for it. This recipes make two loaves. So we enjoy one and I freeze the other one. Tastes just as good when thawed. I like to have a little piece in the morning with my coffee. My taste inspiration for this pumpkin spice bread recipe is the famous slice from Starbucks. You all know the one. This recipe comes pretty darn close! So here’s what you do! In a large bowl, combine the sugar, oil and eggs. Add pumpkin and mix well. Combine the flour, baking soda, salt, cinnamon, pumpkin spice, ginger, baking soda and vanilla. Slowly add your water – beating well after each addition. Remember this recipe makes two loaves. I like to use a traditional loaf pan and also a bundt cake pan. This requires separate cook times. But you do not have to use different pans. Then pour mixture evenly into greased pans. Bake loaf pan at 350° for 50-60 minutes or until toothpick comes out clean. If […]

Raise your hand if you love comfort food? I’ve got both hands raised! However I don’t always love the heaviness and the added calories that come with it. So I decided to do some testing…zucchini testing! For a minute I was obsessed with this small green veggie. Not sure why but let’s just say we ate A LOT of zucchini for a few months. And that’s how I came up with my Zucchini Lasagna: All the flavor! No Carbs! I had seen a post on Zucchini Lasagna on Pinterest and thought hummm that might be tasty. So here’s what I came up with! Super easy and SUPER yummy! In fact you don’t even miss the noodles. First I slice the zucchini very thin. Then I place them on a paper towel to get any excess moisture out. I lightly sprinkle with salt as well. I found the dryer the slices the better the lasagna. Then I chopped up about half of a white onion in a little olive oil. Saute that for a few minutes. Lazy Girl Lettuce Wraps

Howdy friends! Well warmer weather calls for new and lighter recipes. So here is one to get you started – Lazy Girl Lettuce Wraps! A light and savory blend of spicy and sweet sauce, ground turkey and a fresh lettuce crunch. I stumbled upon these lettuce wraps one evening. I had all the intention to make another recipe but then realized at like 5:00 I did not even have all the correct ingredients. Sad to admit I’ve been there all too many times. Anyway y’all can thank me for being unprepared cause these puppies are LEGIT DELISH!! I honestly want to make them everyday. I have made this bread prolly 100 times! It never gets old. And chances are if you are close to me you have received at least a loaf or two! It’s a giftable bread! 😉 So that’s why I call it my Ultimate Banana Bread. Every time I shop I buy about 8-10 bananas. They go pretty quickly at my house. But it’s a general rule if you see 2 or 3 bananas left you leave them alone. You let them get ugly and brown cause that means Mom will make banana bread. My family LOVES banana bread. It maybe last 1 day! So I make it often. I started off using a yum recipe from Paula Deen. As you can see this page is well loved. I honestly think that is a dried piece of banana!! But over time I have created my own recipe. I start off using this exact recipe. However, I’ve added in a few extras. I only use two bananas.
